Medieval, Renaissance, and Modern Era Food and Cooking.
This will be a beginning 6 week course exploring general Food and Cooking in the Middle Ages, Renaissance, and Modern Age. Each class will have 30 minutes of lecture on the given session, then 30 minutes of demonstration in the kitchen.
I will email each student a Word doc. at the end of the 6 weeks with a bibliography and the recipes used in the course.
Week 1: General introduction to the Middle Ages in Western Europe. We will make a dish from Medieval England.
Week 2: The Crusades- This will include discussion of new foods and ingredients brought back to Western Europe by the crusading armies.
Week 3: The Renaissance in England, France and Spain - Sugar was beginning to be less rare, more types of foods were introduced into Western Europe.
Week 4: The Modern Age in Western Europe- Chocolate, Coffee and lots of Sugar!!!
Week 5: The Middle Ages and Renaissance in Russian and Eastern Europe- We will compare and contrast the food and cooking between Eastern and Western Europe.
Week 6: The New World- Many new foods came to Europe as they expanded into the Americas. Food and cooking in Early America will be our focus.
