Everything you need to know about plant-based, vegan cuisine.
Over this 6 week course, Chef Joshua Spain shares his passion with you for making healing foods taste like the classic dishes you crave. This course will cover all the plant-based basics and cooking techniques you need with a strong focus on unprocessed ingredients. Whether Gluten-free or sensitive to other ingredients, this course will respond to your dietary needs to help you make this cuisine uniquely your own. After all, cooking is personal preventative health care. This course aims to empower you with the ability to cook the healthiest food you can for yourself and the people you love.
The following are examples of course material, but as this is a 1:1 course each meeting will entirely cater to you and can be tailored to you and your preferences.
Week 1: Homemade. We’ll cover basic kitchen equipment and jump right in to making homemade plant-milks, GF Muffins, super-food granola, and smoothie bowls.
Week 2: Oil-Free. We’ll water-sauté, create delicious dressings and focus on meal-prep ideas.
Week 3: Pizza Pizza. We’re making two different crusts (one GF), oil-free pesto, and vegan cheeze.
Week 4: West-Mex. We’re making a feast that will impress your guests: enchiladas, pineapple pico, guacamole, cilantro-lime creme, and even a margarita!
Week 5: BBQ. We’re making a BBQ burger, a new take on potato salad, and a delightful GF, oil-free, sugar-free berry cobbler.
Week 6: East Meets West. We’re making sushi, spring rolls, a chop salad and delicious sauces.
You will receive an equipment list and ingredient lists ahead of time so you can cook along with each lesson if you choose. Each class will run anywhere from 60 to 90 minutes. This course is interactive and questions are always welcome.
